Flourless peanut butter cookies

My mom was using this recipe for flourless peanut butter cookies 20 years ago. I’m sure she got the recipe from one of her church or school cookbooks, and they are so delicious, I can’t believe I haven’t made them before!

I became inspired to bake them because our youngest daughter and two precious grandsons are coming to visit today! and you can’t come to Grandma’s and not find some home-made cookies . . . can you?

There are countless recipes on-line for these, but this is the recipe my mom used:

Flourless peanut butter cookies
 
Ingredients
  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp vanilla
Instructions
  1. Preheat oven to 350 degrees.
  2. In an electric mixer, mix together the brown sugar, egg, peanut butter, baking soda and vanilla until well combined.
  3. Roll dough into 1 1/2 inch balls, place on cookie sheet and press down with a fork.
  4. Bake for about 10 minutes, rotating and switching the cookie sheets around in the oven, so as not to burn the bottoms.

Easy, yummy, potato latkes *

Well, I felt inspired to make something a little more complicated than a baked potato for dinner last night so I returned to an old favourite.
These are the yummiest potato latkes! They can be made ahead and reheated just before dinner or lunch or breakfast! Serve with home-made applesauce and sour cream.
A word of caution – use only 1/8 tsp garlic powder – no more, no less!! Good Stuff!!

Potato Latkes
 
Ingredients
  • 3 large potatoes, peeled and grated
  • 1 small onion, grated
  • 6 eggs
  • 1/2 cup flour
  • 1/2 cup vegetable oil
  • 2 Tbsp chopped fresh parsley
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/8 tsp garlic powder
Instructions
  1. Place grated potatoes and onion in a bowl and toss with lemon juice; cover with cold water.
  2. Beat together eggs, flour, oil, parsley, salt, pepper and garlic powder.
  3. Add well-drained potato mixture and mix well. Batter will be soupy!
  4. Drop by tablespoons onto a lightly buttered frying pan, spreading out slightly.
  5. Fry over medium heat until golden on each side.
