Thyme is of the essence

 William Shakespeare (A Midsummer Night’s Dream)
I can’t believe I’m quoting Shakespeare . . . but hey, it’s the middle of summer . . .
Thyme Salad Dressing
1/2 cup olive oil
3 Tbsp balsamic vinegar
Fresh ground pepper to taste
4 sprigs fresh thyme
1 clove garlic, peeled and crushed
Combine ingredients in jar and shake well. Let stand over night in fridge. Pour over salad.
