This is a family staple at our house. It’s hearty, tasty, and very easy to make. I usually start it right after lunch and let it simmer until dinner. And since today we have over 20cm of fresh snow and it’s -19C . . . brrrrr . . . this soup is a good thing to have on hand!
- 1 1/2 lbs ground beef
- 1 onion, chopped fine
- 1 28 oz can tomatoes
- 2 cups water
- 3 cans consomme
- 1 can tomato soup
- 4 carrots, chopped
- 1 bay leaf
- 3 sticks celery, chopped
- 1/2 tsp thyme
- pepper to taste
- 8 Tbsp barley
- Brown meat and onions. Drain well.
- Combine all ingredients in large pot, simmer covered at least 2 hours, or all day!

I made two batches of this soup this past weekend – one for us, one for my in-laws. It’s so quick and easy!
You keep tempting me with all these darn good recipes…one day I am going to show up on your doorstep, knife, fork & spoon in hand.
That would be cool, Deanna!
