Getting ready for a crowd at New Years? Then try this . . .

Cowboy Caviar

There are many variations of this delicious dip – but this is one I really like. It is quite rich (and yummy) compared to some other recipes. So with no further ado here is:

Cowboy Caviar
1 can black beans, rinsed
1 can garbanzo beans, rinsed
1 can white corn (shoepeg) or regular kernel corn
1 can sliced black olives
3 large avocados, chopped and mixed with 3 tbsp fresh lime juice
2 cups sour cream
1 package taco seasoning
5 tomatoes, chopped
2 cups shredded Monterey Jack, or Mozzarella cheese
1 – 2 garlic cloves, chopped
2 – 4 green onions, chopped
Cilantro – to taste – I use lots and lots!!
2 tbsp olive oil
½ to 1 cup Italian salad dressing
Mix all together and let sit for at least one hour in fridge
Serve with tortilla chips
