Old Fashioned Zucchini Bread |
- 1 cup salad oil
- 2 cups sugar
- 3 eggs
- 2 tsp vanilla
- 3 cups flour
- 1 tsp salt
- 1 tsp soda
- 2 tsp cinnamon
- 1/4 tsp baking powder
- 2 cups zucchini (grated)
- Mix together oil and sugar in a mixer.
- Add eggs and vanilla and blend until smooth.
- Sift together flour, salt, soda, cinnamon, and baking powder. Run it through the sifter 2 or 3 times.
- Add flour mixture alternately with grated zucchini, blending until smooth and the zucchini is evenly distributed.
- Pour into two loaf pans lined with parchment paper.
- Bake at 325F for 1 1/4 hour. I used very dark pans so I reduced the baking time to 1 hour. Test with a toothpick, when it comes out clean, the loaves are done.
